We first salted cabbage leaves wirh bay salt which is full of calcium and magnesium, then we added various spices, powdered red pepper, and natural silk amino acids, in between each leaf.
This kimchi has more lactic acid bacteria than regular kimchi, which lowers acidity and delays maturization, so that the refreshing clean taste of kimchi can be enjoyed.
Unlike regular kimchi, Hyangchaebang silk pogi kimchi does not use any artificial seasoning ; it only uses natural seasoning with silk amino acids which lower acidity and suppresses the fermentation of lactic acid bacteria to delay the fermentation and maturization of the kimchi.
