SP-100 structure consists of heating equipment, agitation equipment, water vapor discharging equipment, discharging equipment after finishing drying, etc.
1. Heating equipment first heats heat transfer fluid and then, gradually and slowly heat food stuff in internal vessel by using the heat transfer fluid. How to heat is divided by direct heating method and indirect heating method. The direct heating method, which is to directly apply fire to food, can be cause of pollution on human body and environment by gas generated during burning food in high temperature. In order to solve such problem, we selected the indirect heating method although it has a little less efficiency than the direct heating method.
2. Agitation equipment is the device to dilute food well in heating it and also, to evenly transfer thermal conductivity to food.
3. Air filter heats food in constant temperature and discharges water vapor to the air through 3-stage filter equipment after absorbing and re-heat water vapor when it is generated. Therefore, condensation water is not generated
4. As for internal filter equipment, we selected active carbon filter and ozone filter
5. Because of one slot, it has a little problem on heat insulation and tightly sealing
6. SP-100 ‘s design is simple
7. As for product material, we selected material having strong corrosion resistance as SUS materials.
